Need a Bear Jerky Recipe
 
Hello All,
Does anyone have a good Bear Jerky recipe(Black Bear that is),
And anyother Bear Recipes?

look through the threads in this area there are recipes for other kinds of jerky in here that I am sure would work great with bear.

The only Bear I can honestly remember eating was a really thin round steak, I don't remember how I cooked it but I do rememeber that it got tough because it was cut so thin.

I have a couple recipes for bear on my site, North American Huntress, (look in the recipes menu), still trying to get a couple more added. I have one somewhere for jerky, just have to remember where I put it. :rolleyes:

For jerky you could use the same recipe as you would for beef.

Jerky recipe
 
For bear I recommend that you mix one part of Vodka to 2-3 part tonic, add a twist of lime, drink mixture and send the bear meat to a butcher to be made into pepperoni. I am not fond of bear meat. Pity, I live in black bear central. I saw 15 in 5 hours last spring.

just an opinion but
 
I think I would stick to COOKED dishes with bear meat.
There may be some health issues with bear in an uncooked condition.
Bear is good . . . least the little bit of it I have had to eat was good.

Bear can carry trichina much like pork. If you do make jerky out of it be sure to raise the temp of the meat to at least 200 degrees for 30 minutes during the process.
And keep it in the freezer after it's done unless it's particularly lean to avoid spoilage
