The only problem with setting up like that is that, around here, the wind changes direction so much it doesn't really do much good. When we go out we just spread them out so there's enough room for dinner to land and the dekes can move with the wind without clanking together.
By the way, where on the Snake do you go? We usually go out near Bruneau Dunes State Park.
