AndyL, that menu was a staple of Thanksgiving dinners with my family for years! We used to slow roast that rib roast on a Weber Kettle all day just adding 6 briquettes, 3 per side every 1/2 hour.
I do it now on my Ronco rotisserie. Standing Rib Roast on this thing is da'bomb. That cheasy little kitchen tool has been one of my best kitchen investments, it's AWESOME! I rotisseried a 13.5 lb Butterball in it today. 2h 45m is all it took and I injected it with butter-garlic and made a rub with kosher salt and varios secret spices. The wife makes a killer stuffing with fresh Chestnuts in the oven since we can't stuff the bird.
Mmmmmm....think I'll go make a sandwich while I'm thinking about it!
8X56MS, that squash, cheddar, bacon concoction sounds pretty danged tasty!
