Rabbit -> hold by rear leg, pinch fur/skin at knee joint peel away fur/skin. cut off head sharp knife to gut.
Dove -> hold dove in weak hand breast up; Strong hand grasp craw pinch and peel away feathers and skin ; insert thumb at end of breast peel breast away from carcass remove wings *Leave one if regulations require during transport.

Pheasants, grouse, any birds no bigger than a chicken you can do this....
Quick an clean. Lay the bird on it's back, step on both wings where they connect to the body. Get a good grip on both legs and PULL. The breast will pop right out, no guttin, no fuss. I've even done it on turkey, but you need two strong dudes on each wing and leg to pul the breast out this way.
